Chardonnay from Chablis, France: William Fevre Montmains Cru Chablis 2008


Characteristics of the appellation: A structured, lively and mineral wine with good length on the palate. Both straightforward and fresh, with exemplary concentration.

Food-wine matches: Fish, seafood and shellfish, grilled or in a cream sauce. Poultry and white meat, grilled or in a cream sauce.

Serving temperature: 12°C-14°C.

Pale yellow-green. Musky nose suggests fresh herbs and smoky spices; there's something gruner veltliner-like about this. Then rich, spicy and dry on the palate but not yet filled in. The spicy, peppery finish is long and dry, but currently displays a youthfully bitter quality. Range: 89-91
